Welcome! I am using an ARMS 18 with an EoTech. As far as cowitness goes, the rear sight looks right into the housing of the EoTech, so no-go. However, the ARMS 18 is low enough that it does not interfere with the irons when no optic is mounted. I like the ARMS 18 a lot. My rifle does not have ejection problems with it. You can trim your ejector spring to tune your rifle if it does have problems.
You need to get the optic as low as possible to get a good cheek weld on an M14. My EoTech is too high for this. I have the A2 stock, which has a higher comb, and I still end up with a "chin weld" on the stock. It works well enough but a lower optic would be better. My suggestion is to select your mount first and put it on the rifle to get an idea of where an optic will sit. Then choose your optic and its mounting hardware accordingly.
The other way is to get a cheek riser for the stock.
