| Altered diet
Drastic change in food consumption can cause digestive issues.
Ideally you store what you normally eat. Just by the nature of the product that isn't always possible though. I'm a meat & potato kinda guy & do have instant potato in my stores. But also have alot of rice.
So, my choice has been to alter my eating habits to include stuff like rice into my diet. Atleast once a week to have a meal with rice. Chicken over rice. Stew over rice. Stir fry vegetables(with some meat) over rice.
With any food, being able to make any type of bread will make your food stores go further.
Anyone have thoughts about this issue?

I agree a change in diet can cause issues as well as a change in exercise. I believe you are on the right track in getting yourself acclimated to what you perceive you'll be eating.
Just baked my first loaf of bread Saturday!
Much better than store bought...

Didn't Che Guevera limit himself to meat once/week and live on fruits and veggies the rest of the time?

My guess would be that people who haven't acclimated themselves long before TSHTF will have a hard time adjusting, not just to the change in quality of the diet, but the quantity, as well. It will probably take some doing to get the rationing right.

I have discovered the miracle of probiotics. http://en.wikipedia.org/wiki/Probiotic
Our ability to break-down food is based on the flora and fauna in our stomachs and intestines. While there isn't conclusive proof the above works, as a habitual diner (I almost never eat at home), I've found taking a daily probiotic to work wonders.
I'm not saying it is a cure-all and you won't have heartburn, acid, diarrhea, or anything else, but it can help and it can help when you're making transition food choices. Problem is, most of the probiotics I've found that work, need to be refridgerated and are expensive. Which kind of defeats the purpose in a SHTF scenario. But I think the concept is sound, and if there are "natural" means of achieving the same goals, they shouldn't be discounted.
Some products that naturally contain the same probiotic materials can be fermented and stored for a very long time. Like Korean Kimchi. Or Sauerkraut. And while Kimchi might take some getting used to, I like it--if it's good for my digestion, even better.

Restaurants only care about making money & that takes good tasting food for repeat customers. And that has nothing to do with protein, minerals, nutrients, etc your body needs.
Forget fast food. I won't eat that crap. And I avoid restaurants also. If I can't see the food prepared I prefer not to eat it, simple as that.
Heck, I can't even stand grocery store bread anymore. Its just so loaded with preservatives to extend the shelf life. Nothing better then basic homemade bread with no sugar added.
How much MSG can your body tolerate? TV dinners you can bet the vegetables are soaked in that stuff. If vegetable colors don't look right, you can bet its because of MSG.
Rant off.

We eat lots of rice in our house, I dont remember having chili with out rice.
We use a lot of "Minute Rice" right now but I'm going to start using regular long grain from now on, I am working on finding a good "Red Beans and Rice" recipe right now. I packing away some Imitation bacon bits to use for flavoring things, If I get into canning I may try canning some real bacon. The way I see it bacon is the one food that can be added to any other food and make it better, of course that might be why I had to have 6 stents put in the main artery coming out of my heart last year.

I made some bread from scratch a while back, as in I ground my own flour. Your gi will have fits if it is not accustomed to that much fiber and whole grain. Tasted wonderful though. I later found it is advisable to cut the fresh ground flour with store bought until your system adjusts.

I use a ratio of 4:1 flour to whole grain. Makes for a better dough rise also.

I love rice too. We eat it at least a couple of times a week. It also has a very good nutritional profile. Heck I like beans too.

I eat plain white rice nearly everyday. Either as a side dish or incorporated into something.
I like rice and always have. My stomach condition pretty much dictates it's usage.
I have enough of it and beans put away for 10 years at the current rate of consumption.
