Storing in buckets, Questions?

OK
I hope you guys are not getting mad at me for asking so many questions.
I am getting ready to put away some beans that are in the original 5 lb bags, I am going to try to put 3 diffrent kind of beans in one bucket, Will it hurt to store them in the original bags? It takes up a little more space in the buckets but I'm going to pack the empty spaces with 1-2 lb bags. these are going into a Mylar bag that will be sealed with a couple of oxy absorbers and a couple of Bay leaves, I might even flood it with CO2 from my MIG welder tank.
I like the ides of diffrent kinds of beans in one buckets so I dont have to open more then one bucket to get what I want. Any input? thanks.

I don't see a problem with the original bags idea. The main issue with storing beans is that they dry out and get harder and harder to cook. Someone posted here recently that they lose oils as well- maybe that's what I'm referring to. I've never had insect issues with dried beans and have never heard of any either, so I'm not sure the CO2 would be necessary. Mice and rats and other critters will no doubt eat them if given the opportunity- starting out, I had mice carry off a few pounds of lentils.

Bonus comment: For preparing older beans, a pressure cooker is definitely to be recommended.

Since you are using oxy absorbers in your mylar bags you don't need to do anything else. However I wonder if the oxy absorbers will be able to pull the oxygen out of the sealed bags of beans? It might be a good idea to poke some small holes in the bags so that the air trapped inside of them when they were packaged can be absorbed by the oxygen absorbers.

Oh great so now on top of everything else I have to worry about O2 in my beans ?

Seriously, good to know. But apparently it's hard to buy O2 absorbers that haven't already been used up during repackaging at the retailers.
